Healthy Recipe: Perfect Parfait

Sometimes you just need some comfort food. But what about “the-day-after” feeling, when you step on the scale and regret the decision? No more when you go on a living plant based diet. Not only will you change your relationship with food and get rid of those cravings, you will also delete the endless inner fight between your lust and your brain that knows better, but can’t “win.” Imagine what you can do with that emotional freedom, with that new space and all that time you used to spend on thinking about what to eat when… Ready for a guilt-free treat with a luxurious feel?


  • Blender
  • A pastry bag or plastic bag
  • Champagne glasses to serve in or glass containers to take in

Ingredients for 2 servings

  • 1 C soaked cashews (2 hours minimum) or young Thai coconut meat
  • Handful of strawberries or other berries of choice
  • 1 to 2 TBSP agave (to taste)
  • ½ tsp vanilla extract or ½ pod of vanilla seeds
  • ¼ to ½ C of spring water (start with less and add if necessary)

To assemble

  • A small box of blueberries
  • A small box of raspberries or strawberries
  • Small mint leafs, a few chopped almonds or a self made crumble


  • Blend all parfait ingredients until very smooth
  • Fill up your pastry bag with the parfait cream
  • No pastry bag? Fill up a plastic bag and cut off one corner
  • Place a layer of berries on the bottom of your glass
  • Squeeze a layer on top
  • Repeat this process until your glass is full
  • Finish with some berries on top and a touch of fresh mint


  • You can make different colored layers by blending different berries with the cream
  • To make a quick healthy crumble: pulse some dates with almonds until coarse
  • Experiment with other fruit, colors, textures
  • This treat is made in 10-15 minutes
  • Served in fancy glasses, it’s a great entrée for exquisite guests
  • Squeeze leftovers in small glass containers to take to your office!
  • Store in the fridge for up to 5 days (if you can leave them untouched…)
