Ham and Egg Enchiladas

Ingredients:

  • 2 cups diced ham
  • 3/4 cup sliced green onions
  • 2 cups organic shredded cheese, divided
  • 1 (4-oz.) can diced green chilies
  • 8 corn tortillas (gluten free)
  • 8 eggs, beaten
  • 1-1/4 cups fat-free half-and-half
  • 2 tsp. Morton & Bassett Mexican Blend Seasoning
  • 1/2 tsp. each: salt and pepper
  • Salsa, sour cream and avocado slices

Directions:
Prep time: 20 minutes

Cook time: 45 minutes

Preheat oven to 375°F and spray a 13-by-9-inch baking dish with nonstick cooking spray. In a medium bowl, stir together ham, onions, 1 cup cheese and chilies. Heat tortillas in the oven or microwave to soften and place equal amounts of ham mixture in the center of each. Roll up and place in prepared dish. Whisk together eggs, half-and-half and seasonings and pour over tortillas; sprinkle remaining cheese over the top. Bake for 45 minutes or until egg mixture is set. Serve with salsa, sour cream and avocado slices.
