Broccoli Salad in Radicchio


As soon as school is starting, life is re-arranging itself for new busy-ness, and so do you. This is often the time that you “don’t have time” for preparing fresh vegetables for a nourishing meal. Nevertheless, this is the food you and your children need the most for a healthy beginning and accelerated growth. So, it’s time for some “fast food!” This broccoli salad delivers huge quantities of vitamins, minerals and alive enzymes in only ten minutes…


A food processor, a sharp knife, a bowl, an ice cream scoop



  • 1 C raw macadamia nuts
  • 2 TBS apple vinegar
  • ¼ to ½ tsp sea salt
  • 3 TBS date paste (blend some dates with a bit of water)
  • ¼ C water


  • 1 broccoli head, in parts
  • 1 red onion
  • 1 spring onion
  • 1 C sunflower seeds
  • 1 C raw raisins
  • 1 Radicchio


  • Place the broccoli and onion in your food processor
  • Chop up until you have a fine crumble (it only takes a few seconds)
  • Transfer to a big bowl, add the sunflower seeds and the raisins
  • Mix well by hand
  • Pour the sauce on top
  • Stir well until the broccoli is totally covered with sauce
  • Peel off one Radicchio leaf per plate, wash it and place it on each plate
  • Scoop a ball of broccoli salad in the middle of the leaf (an ice cream scoop works really well for equal portions


  • Makes a lovely combination with a simple salad
  • Use different kinds of dried fruits (apricot, figs, etc.)
  • If you don’t like using dense nuts, you can replace them with pine nuts
  • To make an easy to take wrap in your lunch box, simply close the leaf with a small skewer
