4 to 6 medium to large organic beets, cut into quarters
1 medium organic yellow onion, diced
1 bag of organic baby carrots
Add a variety of vegetables of your liking (broccoli, green beans, etc)
1 to 2 Tbs. minced garlic (add more if you like)
32 to 64 oz of organic vegetable broth
Filtered/purified water – enough to dilute the broth, to your liking
2 Tbs. Olive Oil
Salt and Pepper add to taste
HOW TO PREPARE:
1. Add the olive oil, minced garlic and onion to a large pot. Sauté until golden brown. Add salt and pepper. Add more olive oil if need be.
2. Add the vegetable broth and vegetables. Bring to a boil.
3. Boil until the vegetables are cooked, al dente is preferred.
4. Simmer until ready to serve.
