Spinach with Raisins and Pine Nuts

Ingredients:

  • 1/2 cup of raisins
  • 1 thick slice crusty white bread
  • 3 Tablespoons olive oil
  • 1/3 cup pine nuts
  • 1 1/4 pounds young spinach, stalks removed
  • 2 garlic cloves crushed
  • Salt and freshly ground black pepper

How to Prepare:

  1. Put raisins in a small bowl with boiling water and let soak for 10 minutes. Drain.
  2. Cut the bread into cubes and discard the crusts. Heat 2 tablespoons of the oil and sauté the bread in the oil until golden. Drain
  3. Heat the remaining oil in the pan. Sauté the pine nuts until they are beginning to color. Add the spinach and garlic and cook quickly, turning the spinach until it has just wilted.
  4. Toss in the raisins and season with salt and pepper. Transfer to a warmed serving dish. Sprinkle with croutons and serve hot.
