The way you eat and live can make you sick or…heal you. A healthy raw diet is the key for many ailments. A vegetable that is often overlooked, underestimated, denied and rejected—due to its less common taste—is seaweed. Yet, a small daily portion can set you up for a happy thyroid, and protect against radiation. You can take this recipe and start varying each part of it and turn it into another exciting dish with high iodine levels. This food is your yummy thyroid medicine!

PREPARATIONS

For the Sea Vegetables

Rinse about half the amount you need under running water
Steep the sea vegetables in a large bowl covered with spring water
Let them soak for an hour: they will expand
Take out and rinse well again to remove the excessive salt

For Kelp Noodles

Rinse a pack of (green tea) noodles

MARINATE THE SEA VEGETABLES  10 MINUTES IN

2 TBSP Sesame oil
2 TBSP Apple Cider Vinegar
1 TBSP Tamari (gluten-free) or Nama Shoyu
2 TBSP date paste (blend some dates with water) or a bit of Stevia to taste
1 TBSP raw sesame seeds
1 TBSP of minced ginger
Juice of 1 lime

MISO SOUP

1 C hot water (to about 158°F, not boiled)
2 TBSP miso
2 TBSP dulse flakes
1 TBSP grated ginger

Blend the water with the miso, flakes and ginger
Divide the soup over 2 bowls
Place some kelp noodles and sea vegetables in the middle of the soup
Sprinkle dulse flakes on top and flatter a few radish slices in the soup

TIPS

Any kind of noodles or sea vegetables combine well with miso soup
To soften the noodles, stir them into the warm soup
