Oatmeal-Walnut Scones

Ingredients:

  • 1 cup all-purpose flour
  • 2/3 cup whole-wheat flour
  • 1/3 cup Honey
  • 1 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 chilled butter or margarine, cut into pieces
  • 1 1/4 cup quick-cooking oats
  • 3/4 cup finely chopped walnuts, toasted
  • 1/4 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 egg, lightly beaten

How to Prepare:
Preheat oven to 350 degrees
Bake 18-22 minutes or until scones are lightly browned and serve warm
Yield: about 15 scones

Combine flours, baking powder, baking soda, and salt in a large bowl. Use a pastry blender or two knives, cut butter until mixture resembles fine meal. Stir in oats and walnuts. Add honey, buttermilk and vanilla; stir just until mixture is blended. On a lightly floured surface, pat dough to ½ inch thickness. Use a 3-inch diameter round cookie cutter dipped in flour to cut out scones. Place one inch apart on lightly greased baking sheet and brush tops of scones with beaten egg.

    These are wonderful! I made some changes you might be interested in. Instead of 3/4 cup butter I used 5Tbsp. butter, 9 Tbsp. ground flax seed, and 1/4 cup canola oil. I doubled the vanilla and I put the egg into the batter instead of brushing it on top. I used skim milk in place of the buttermilk and I added chocolate chips. They were fantastic and I didn’t feel guilty eating them!
