Honey Valentine Cookies

Ingredients:

  • 1 cup margarine or butter
  • 3/4 cup Manitoba honey
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tarter

How to Prepare:

Pre-heat oven to 350 degrees. Bake Time 12 minutes

  1. 1Cream together margarine or butter and Manitoba honey
  2. Add to cream mixture egg, teaspoon vanilla, teaspoon almond extract
  3. Blend dry ingredients into cream mixture (flour, baking soda, cream of tarter)

Refrigerate for 10 minutes.Form a heaping tablespoon into a ball and flatten on an ungreased cookie sheet. Bake for 12 minutes (baking time will vary depending on oven).

This cookie is like a drop sugar cookie. It can be eaten plain or decorated with your favorite icing. For valentines bake part of the dough in a heart shaped cake pan and surprise your sweetheart with a valentine cookie. Adjusted baking time approximately 20 minutes.

Variation- Thumbprint Cookies

Follow the Honey Sugar Cookie Recipe in addition use ¼ teaspoon almond extract.

Using a level tablespoon roll dough into balls and place 1 inch apart on ungreased baking sheet and chill for approximately 10 minutes. Using your thumb or the rounded end of a spoon make an indentation in the center of each ball. Fill each indentation with ¼ teaspoon jam, raspberry, strawberry, or apricot, and bake until tops are pale golden and undersides are golden 10 to 12 minutes. Transfer cookies to a rack and cool completely. For variety omit jam, bake as usual and while cooling place a chocolate kiss in the indentation.
