Honey Lime Salmon

Ingredients:

  • 3 tablespoons honey
  • 1/2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon very hot water
  • 3/4 teaspoon grated fresh lime peel Salt and black pepper
  • 4 pieces salmon filet ¾ in thick (about 6 oz. Each) skin removed
  • 3 tablespoons chopped fresh cilantro leaves and lime wedges

Grill about 8 min
Makes 4 main dish servings

Preheat grill. In cup, stir together hone cumin, coriander, water, lime peal, 3/4 teaspoon salt and 1/4 teaspoon coarsely ground black pepper until blended. Rub Honey mixture over fillets. Place salmon fillet skin side up on hot grill/pan and cook four min. With side metal spatula, carefully turn salmon over and cook until just opaque throughout, 4-5 min. Sprinkle salmon with cilantro and serve with lime wedges.
