As most coffee connoisseurs know, the most important part of the coffee process is the roasting. A lesser known fact is that conventional roasting with hot air and infrared roasting techniques yield very different results in acidity. During the coffee roasting process, natural coffee acids form, which can lead to heartburn, indigestion and upset stomach. Less acidity creates more enjoyable coffee drinking experience with fewer side effects.

Roasting coffee changes the chemistry of the green coffee bean. During the roasting the beans acquire the hue and aroma of fresh roasted coffee. Coffee roasting is a chemical process by which aromatics, acids, and other flavor components are either created, balanced, or altered in a way that should augment the flavor, acidity, aftertaste and body of the coffee as desired by the roaster.

Most coffee is roasted using conventional roasting techniques. Beans are placed on a flat screen conveyer and are roasted by flame-heated hot air blowing from below. Another method is to blow the flame-heated hot air through a tumbler as the beans rotate.

Under both conventional methods the flame heating the air tends to burn the beans and cook them unevenly. Also, acidic compounds are still present in the beans, and at a much higher content than with infrared roasting techniques.

Only 2% of all coffee beans are specialty roasted using infrared technology. Infrared technology roasts coffee beans by increasing temperatures quickly and evenly, unlike beans roasted by flame-heated air. Studies show less acidic compounds are created with infrared roasting than with conventional. The consistent formation of brown colored compounds is highly noticeable, showing the beans are uniformly heated and never burned. The infrared roasted beans have a quick increase in the internal temperature, but suffer from less damage on the surface. Studies also reveal uniform heating even at the core.

Even more note worthy is the change in the contents of citric acid, malic acid and formic acid that are naturally found in the bean. When monitored and compared to conventional roasting, infrared roasted coffee beans show changes from an earlier stage. As the roasting proceeds, the infrared roasted coffee beans contain smaller amounts of these acids.

The content of aroma compounds is 25% more than that of conventional roasting and carries the same standard to the cup. The taste from the brewed hot air roasted coffee beans is similar to most conventional roasting, while the brewed infrared roasted coffee beans lack the bitter taste.

Rich full flavor characteristics of coffee beans come through best when there is less acidity. In addition, more flavor means less coffee grounds are needed in make the same number of superior brewed cups. Infrared roasting technology gives a full-bodied flavor, with less acidity and a better yield.

Manitoba premium white honey is produced in McCreary near the Riding Mountain National Park in Manitoba, Canada. Honey color and flavor is largely determined by the floral source of the nectar. Lighter honey has a milder taste. This delicious white honey comes from bees visiting delicate wildflowers indigenous to that area.

What’s raw honey? Honey is classified as raw when it is unheated, pure, un-pasteurized, and unprocessed concentrated nectar that comes straight from the extractor. Does the natural product work as well as the chemical laden one?

The two mid-priced products which represent the best from each side of the debate are DeVita’s Optimum Rejuvenation (built on a platform of essential oils and botanical derivatives) and Olay’s Regenerist (which includes an Avobenzone based sun block along with an exclusive amino-peptide complex). Regenerist’s unique “Amino-Peptide Complex.” This formula consists of a specific pentapeptide (Pal-KTTKS), vitamin B3, vitamin E, pro-vitamin B5, green tea extract, and naturally occurring allantoin. Like DeVita’s Optimum Rejuvenation, this combination of chemicals helps the skin appear firmer and retain moisture better. The skin is younger looking and more radiant, fine lines around the lips and eyes seemingly disappear over time.

Taking care of your health ultimately benefits skin the most. Plenty of water exercise and fruits and vegetables rich in anti-oxidants along with minimal UAV/UVB exposure will ultimately prevent premature aging of the skin. Before deciding which anti-aging cream is better, be cognizant of the fact that the more natural products will benefit more than just your face. The combination of natural and botanical ingredients is less likely to cause allergic reactions than chemically laden products. Furthermore, products such as DeVita Optimum Rejuvenation, are not as harsh or have as many side effects as any of the Olay product lines.

One often-overlooked area in the pursuit of a healthier, eco-friendly lifestyle is in the choice of menstrual hygiene products. Many women are not aware that choices exist beyond the disposable pads and tampons they grew up with. Let’s take a look at our current choices.

Tampons and pads are made from bleached fibers of cotton and/or rayon (manufactured from wood pulp). Prior to 1999 a chlorine gas bleaching process was used which produced dioxins, a family of chemicals, which pollute the environment and are suspected cancer causing agents.

Today, many manufacturers are instead using chlorine dioxide as a bleaching agent, which, although its use is classified as being a dioxin-free process, can theoretically produce small amounts of dioxins.

These same fibers can harbor bacteria, leading to infections. A very real risk associated with bacteria in tampon use is Toxic Shock Syndrome. This is a very serious disease, which in rare cases, can be fatal.

Tampons, due to their absorbent properties, upset the natural moisture content and pH balance of the vagina. This can lead to irritation, abrasions, or infections. Concerns have been raised about the sloughing of and retention of tampon fibers within the vagina after a tampon has been removed.

Environmentally speaking, disposable products produce huge amounts of waste. In North America, more than 12 billion pads and tampons (plus all of their packaging) are disposed into landfills and sewer systems annually. It is estimated that the sanitary products and their accompanying wrappers used by an average woman in her lifetime would fill a dump truck.

Here are some healthy, cheaper and more natural alternatives:

Reusable cloth pads
Cloth pads have a distinct advantage over disposables in that they allow the skin to breathe. This reduces wetness, chafing, irritation, odor, and decreases the likelihood of bacterial or yeast infections.

A wide variety of pads exist on the market, ranging from simple unbleached organic cotton, to wild whimsical prints in cotton, hemp, fleece, or bamboo fabric. Available in a range of sizes and absorbencies, most are designed with “wings” that snap around the underwear.

Maintenance is as simple as hand washing or soaking used pads in cold water until they can be machine-washed. As long as the rinse water is changed daily, laundering can be deferred until the end of your period. (Repurpose an old percolator-style coffee pot from an antique store as a soaking vessel to make changing the rinse water easy.) Pads will typically last for five or more years.

Menstrual cups
The first menstrual cups were actually produced in the 1930s. Today’s versions are basically a flexible, bell-shaped cup that is inserted into the lower portion of the vagina, to collect (rather than absorb), the menstrual flow. They are made of either latex rubber or medical grade solid silicone—the same material used in artificial heart valves. (Please note: This is NOT the silicone GEL associated with leaking breast implants.)

Menstrual cups can be safely worn for up to 12 hours, removed, emptied, rinsed and immediately reinserted. A properly inserted cup should not leak. Because they do not absorb, they will not disrupt the natural moisture balance or pH of the vagina, nor will they cause abrasions. There has to date, never been a single case of Toxic Shock Syndrome associated with menstrual cup use.

A properly maintained cup can last for five to10 years. At a cost of around $35, a cup will produce monetary savings after a few short months.

Numerous women have reported that making the switch to reusable products has resulted in shorter, lighter periods, with less cramping and discomfort than experienced with disposables.
