Blizzard Oyster Stew

Remember when necessity was the mother of invention for most tools, etc.? Well it’s that way in cooking, too. Yesterday, I had to stay inside because of the howling wind and snow.

I was hungry for Oyster stew like I fed my family many times. Here’s what to do when you don’t have fresh oysters use an 8 oz. can of oysters (Luckily for me, I found one in the pantry) and turn it into Blizzard Oyster Stew.

It was good, even though I didn’t have Fresh Oysters!!!!!

Ingredients:

  • 1 can 8 oz. oysters, saving liquid
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream, mixed with the milk
  • 1 dash of celery seed
  • 1 dash of thyme
  • 2 dashes cayenne pepper
  • 1 med. large golden Yukon gold potato cut into about 1” cubes.
  • 1/3 of a yellow onion cut fine and sautéed extra virgin olive oil
  • Salt and pepper to taste
  • 1 1/2 tbs to 2 tbs butter

Directions:

Cook the potato in the chicken broth until tender and sauté the onion. Add the milk and cream, celery seed, thyme, cayenne pepper. Cook above ingredients just below a simmer until tender. Add the oysters and 2-3 tbs of the oyster liquid. Heat through and add salt and pepper to taste.
