Xanthan Gum

By Brittany Russell Despite its very processed-sounding name, xanthan gum occurs naturally when the bacteria, xanthomonas campestris, is combined with and fermented in corn syrup. The slime substance that forms in the process acts as a natural stabilizer or thickener.
